While it's not quite back to school time for us, I am taking sometime before I head back to work on Monday to get some work and school lunch ideas together. I'm hoping to catalog a bunch of ideas here so in the middle of the year when I am out of ideas and am too tired of lunch making that I can come back to these posts and whip up some quick, fun, lunches.
I've always been a take my own lunch to work kind of person. Sure, I like to go out for lunch occasionally, but when I look at how much a lunch out costs it makes my head spin - between $10 and $20 is norm for a quick working lunch. Yikes! On the flip side though it can be a stress filled nightmare to out together two packed lunches every day (kudos to those of you with more than one kid!).
So here we go - breakfast and lunch idea #1
Breakfast:
Smoothies. Although the sound of the blender is a bit much to take at 6 in the morning, The Kid and I both love smoothies. Our basic recipe is:
- A couple of cups of frozen fruit. I have been buying berries at the local market and freezing them, hopefully they should last well into the winter.
- A half cup (approx) of plain greek yogurt
- A drizzle of honey or agave syrup
- Some orange juice to thin it out a bit.
Blend and pour into a reusable cup (we found these really cool one pictured below at Staples). I can drink this on the way to work, leaving me extra time to get The Kid organized and on the way to the bus.
The mom breakfast - smoothie, coffee, fruit, granola bar. Quick and portable.
Lunches:
The key to working mom and kid lunch is to try to keep them the same. Right down to the lunch box theme.
Kid Lunch:
The awesome Star Wars Lunch Box.
What's in the box: Cheese Sandwich (because that is what she'll eat), fruit salad, cheddar and cherry tomato mini-kebabs (on toothpicks), juice box, and a couple of handy recess snacks. Plus I found these super cool lunch notes (that's the banana thing) just the thing to add an extra smile to her lunch. Not pictured is the flat freezer pack that keeps her lunch cold until lunch time.
Now the mom lunch.
What's in the mom lunch: Ham and cheese on pitas (I would make pita sandwiches for the kid if she would eat them), cheese and cherry tomato "salad", yogurt, granola bar, fruit, and a cup of soup (just in case). No freezer pack in my lunch since I have access to a fridge. Also no lunch note for me. Maybe I can find an adult set somewhere.
There we go - off to a good start, quick, easy, healthy breakfast and lunches. I think my next idea will be breakfast for lunch - check back for that one!
