Ok, so carrying on with the back to school meal ideas. This weeks idea features a favourite of mine - Quiche. This is one of the simplest meals to make and it's perfect for dinner and then left overs for lunch. As well, with a simple basic recipe you can create a quiche to appeal to everyone in the family. Even the super picky eater. Quiche freezes really well and reheats in the microwave beautifully.
First up, you need a really simple recipe. The one I follow came from a kids cooking book of all places!
Gather the ingredients!
(I'm not sure why this is blurry, but you get the idea anyway)
Your basic ingredients are - 2 eggs, 1/2 cup milk, 1/2 cup of cream, and a pie shell. Yes, I could make pie crusts, but I don't have time for that.
While you are chopping and mixing bake your pie crusts, following the instructions on the box or the in the recipe (if you choose to go that route).
The first step is to beat the eggs and then stir in the milk and cream.
Then chop up the filling. I'm making two quiche here. The first, as you may have guessed from the picture above, is asparagus, peas, and gouda. You'll need about 1/2 of each type of veggies and however much cheese you choose to add in.
(Yeah, those are frozen peas. From a bag. But the cheese is Gouda from a real live family cheesery)
My second quiche is broccoli, cheddar, and ham (and a little asparagus because I chopped too much for quiche #1). Note** each quiche requires the 2 eggs, cream and milk mixture.
Final step is to put the filling in your pre-baked pie shell and then cover with the egg/milk mixture. Add some pepper, salt, and other spices if you like. Then bake at 350degrees for 45 minutes (or until the quiche is baked all the way through).
(tip - place the quiche on a cookie sheet to make it easy to put in and take out of the oven)
Here's how this looks packed as a lunch
The Kid and I can take pretty similar lunches - which is nice,since it saves time and brain cells (no stress trying to pack two different lunches)
Breakfast idea for this day: Smoothie and homemade savoury muffin. Favorite muffin idea is a plain muffin with cooked bacon and cheddar cheese mixed into the batter.
School starts up next week so I will have to get some more ideas going! Who has great quick easy lunches and breakfasts they want to share?
