This is from this months Canadian Living - March 2010.
3 tbsp extra virgin olive oil (I used just regular Bertoli olive oil)
1/2 tsp paprika
1/4 tsp salt
1 head of cauliflower (approx 3lb)
In a large casserole dish stir together oil, paprika, and salt. Cut cauliflower into florets and add to paprika mixture. Toss to coat.
Roast in 400F oven, uncovered and stirring once until tender and browned 30 to 35 minutes.
I forgot to take a picture, but it looked good! I've never baked cauliflower but this turned out pretty well. I took it over to the neighbours for dinner and everyone (over there) ate it. Seemed like they liked it - Yves doesn't like cauliflower but he did try it. Isabelle also tried it, she is a fan of raw cauliflower and refused to finish eating it because it didn't taste like cauliflower! I swear one day she will eat something and like it and I will do a happy dance around the block.
I would say that this recipe could use a bit more seasoning. Maybe a bit more salt, and some pepper? I give it a 4 out of 5 though.
This sounds awesome. I bought a head of cauliflower yesterday. I am going to try this sometime this week.

This was pretty good but lacked flavour (I doubled the paprika only). Next time I will likely use 1/2t salt, 1.5tsp smoked paprika, and 4T of olive oil. Also, I added 2 cloves of garlic and used smoked paprika as I find it is generally more flavourful. The bits that got lots of seasoning were delicious - Would make this one again!

Thanks for commenting and adding some recipe notes. I totally forgot about this recipe, but I just happen to have a cauliflower in my fridge that needs to be eaten!
Sadly I don't have smoked paprika.....guess I have a new thing to look for in my grocery store travels!!
